Vines are planted up to 670 m on the steep banks of the River Bibei in the DO Ribeira Sacra, a fascinating landscape of hidden valleys and gorges littered with Roman ruins and monasteries from the middle-ages. The cellar of Dominio Bibei has been built to reflect this untamed land of ancient retaining walls and terraced vineyards and the buildings are fragmented up the slope, linked by a single linear staircase. Wine-makers Sara Perez and Rene Barbier ulitise this and the grapes and wine are moved around the winery by gravity along biodynamic principles with the underground temperatures providing natural refrigeration. All harvesting is done by hand and all wines are unfiltered. Every vintage is a struggle against the harsh Galician elements, every vintage is a challenge that Dominio do Bibei rise to with heroic relish.
