Carole Bouquet

Located on the beautiful Island of Pantelleria between Sicily and Tunisia Carole Bouquet’s estate is dedicated to making the famous Passito di Pantelleria. Her vineyards are planted on terraces cut from the volcanic soil and surrounded by dry stone walls to protect the vines from the strong winds which blow off the African coast. The local grape variety, Zibbido (Muscat of Alexandria), ripens under the warm Mediterranean sun to give exotic aromas and rich natural sugars.

Hand harvested, the best of the crop is laid out to dry in the sun, concentrating the sugars and acidity in the grapes. After two to three weeks the partially dried berries are added to fermenting wine, massively boosting the sugar content and giving us the golden, rich yet zippy dessert wine for which the island is famous.
