Chavignol is a town more famous for its 'Crottin' - a pungent goat's cheese which resembles droppings from the aforementioned beast. The Bourgeois family have been making wine here for 10 generations and their domaine is now one of the most important in Sancerre. The Pouilly-Fumé is intense and smoky with a fine mineral backbone.
